Breakfast to go




💗Layered fruits, oats and Joghurt in a bottle.💗

Recently developed a passion to take this breakfast to my working place...
Its yummy , healthy and it will make you feel loved..💗


Take some Chia seeds , pour milk over it.
Add some oats, pour some milk.
Pour some honey.
Pour Joghurt/ Frucht joghurt.
Toss in some Almonds, walnuts .
Top it with fresh cut fruits like Mangoes, 
Red Green Grapes, Figs, Pomegranate, Strawberries.


Yummy tasty there you go !!

Vermicelli Pulao


Things Needed:
Roasted Vermicelli -2 packs
Carrot - 2 long cut
Green beans - a bunch , small cut ( like for thoran)
Ghee - 3 tbsp
Turmeric - 1/4tsp
black cumin - 1/2 tsp
Cloves - 4 , Cardamom 3 ,
Cinnamon - 3 sticks , Star aniseed - 1
Coconut milk - 2 cup

For Seasoning,
greenchilly - 1
onion - 1/2 of one

Method:
Heat ghee in a nonstick pan.Add black jeera followed by crushed masala spices & turmeric . Saute 5 seconds then add cut vegetables into this. Add 1 tsp salt and saute until the rawness of vegetables goes .
Mix in roasted vermicelli and add coconut milk & water (the water should just cover the vermicelli ).
Cook closing the lid . Once the pan is filled with steam you can switch off the heat .
Cook until the water is fully absorbed .
Serve simply so or topped with fried onions & chilles.

Gothambu Puttu

GOTHAMBU PUTTU- WHEAT FLOUR STEAM CAKE

Things needed:

Puttu flour - 2 cups
Grated coconut - 50 gm
salt - 1/2 tea spoon
Water - 3/4 cup or as needed.

Utensils needed : puttu maker

Preparation method :

If you are using dessicated coconut then allow it to soak in water first.
Dissolve 1/2 tsp salt into the water.
Take the flour in a vessel. Pour some water into the flour . Try making small lumps using hand. (Just like you make crumbles for cakes, but not so big as crumbles).
Also add 2 spoons of coconut with it.
The flour will be like in the picture.

The method for making puttu is the same for all flour types like red rice flour or plain rice flour.

Kadala Curry

KADALA(BLACK CHANA DAL) CURRY
Kadala curry is a nutritious side dish prepared for Puttu ( Kerala steam cake) . Puttu n kadala is a made for each other combination . If you mention one the other one comes to our mind .You know what I mean.

Things needed :

Kadala or Black chana dal - 1 cup
Ginger - 1 inch piece, 1 tsp , chopped
Garlic - 1 tsp , chopped
Green chilly - 1 , sliced
Onion -1 small or 1/2 of a big onion, (100 gm ) sliced
Tomato - 1 small, finely chopped
Chilly powder - 1/2 tbsp
Coriander powder - 1 tbsp
Turmeric - 1/4 tsp
Meat masala - 1 tbsp
Salt
Curry leaves - 1 spring
Coconut oil - 3 sp
Copra (Small coconut pieces ) - optional

Preparation method :
Soak overnight the kadala . Pressure cook it adding enough water to cover it & 1/2 tsp salt.
To prepare the curry , first heat oil in a nonstick pan. Add ginger garlic to it when the smell spreads well add Onion sliced & green chillies to it. Saute until onion starts turning transparent to brown .
Add finely chopped tomato , Chilly powder & Turmeric . Saute for 5 sec. or so , so that its rawness may go.
Add cooked kadala along with its water . Add coriander powder , curry leaves & meat masala and cook until it gets a bit more thicker . Add copra pieces also in between .

Egg Curry

Egg curry for chappathiand appamEGG CURRY MASALA
Things needed :
Eggs - 4 boiled
Ginger Garlic - 2 tbsp , chopped
Onion - 3 big, 350gm , sliced
Tomato - 2 ,200gm, sliced
Green chilly -2 slit

Chilly powder - 3/4 tbsp
Coriander powder - a little bit less than 3/4 tbsp
turmeric -1/4 tsp
Garam masala -1 tsp

Preparation method :
Heat oil in a nonstick pan. Add ginger garlic chopped , fry until rawness goes.
Add onions , green chilly & saute , till transparent .
Add turmeric,chilly powder, Coriander powder , 1 tsp salt and mix well .
Add tomatoes. cook until tomatoes are soft . Add 1/2 cup water , curry leaves and cook to make the gravy.
Before finishing add Garam masala and cook for another 1 min.

Vegetable Stew


POTATO STEW Recipe


Vegetables cooked in coconut milk and spiced with Garam masala.
The spiciness is balanced due to coconut milk.

This easy stew is my time saver and its often made for breakfasts with appam (south indian bread made with rice flour) or for dinner with chappathi.


Things needed :
Potatoes - 3 , peeled and cubed
Carrot 2
Green Peas 1/2 cup
Biriyani masala/Garam masala - 1 tsp
Coconut milk - that from 1/2 coconut, if you are using coconut cream then 4 spoon from it will do.
Curry leaves - 1 spring
Salt .

Preparation method :If you are using fresh coconut milk . Make coco. milk from 1st squeeze ( onnam pal) & that from 2nd squeeze ( rendam pal).
Cook the cut potatoes ,Carrot, Peas , curry leaves adding salt and coconut milk from 1st squeeze
(onnam pal) .
When they are cooked , add garam masala and coco. milk from 2nd squeeze, heat until the gravy thickens .
If you are using coco. cream then , use 3 tbsp of it for cooking vegetables and at the end add 1 tbsp before finish.

VERMICELLI UPMA

This is the version of vermicelli upma which mom makes at home , using coconut milk & grated coconut. .

Things needed :


vermicelli - 1 packet
coconut milk - 1 cup
grated coconut - 5 sp
mustard seeds - 1/2 tsp
curry leaves -1 spring
red chilly or green chilly - 2
salt , oil -2 sp

Preparation method :


Heat 2 sp oil in a nonstick pan. Add mustard seeds. When they splutters add curry leaves , chilly and fry.
Add vermicelli & Roast the vermicelli in this oil.
Add the coconut milk and water if required and cook in medium flame.
Just before switching off the flame , add the grated coconut , combine all together.
Serve hot with Tea or Coffee.

Rava Kanji

This porridge is preferred between sicks & old people because its refreshing. And it is easy to digest. I have seen my grandma having rava kanji when i was child . Anyway I got sick today , my ENT system is completely upside down and I wanted to have something hot. So here comes the rava kanji recipe. It's really easy to make. Things needed : Unroasted rava ( Sooji ) - 1 cup Milk 1/4 cup Water Sugar ( can be replaced with little bit of salt for sugar patients) Cardamom - 2 crushed for flavouring Preparation method : Cook rava in a pot adding enough water to cover it. Let it boil and cook until smooth. Add milk and make it favourable consistency. Sprinkle cardamom and sugar. Bombay Bread Toast

Bombay Bread Toast Recipe

BOMBAY BREAD TOAST


Its a perfect breakfast recipe with egg, milk n bread all together and also very fast n easy to make. We used to make it at home since a long time.


Things needed :

Eggs -3
Milk 1 cup
Sugar 3 sp or as needed

Preparation method :

Mix all the ingredients well to make a loose mixture.
Dip the bread into this mix for some seconds . The mixture should be coated on both sides of bread.
In a nonstick pan . Pour some Ghee or butter & fry the bread turning both sides.

Sweet German Bread - Campingwecken

Campingwecken Recipe

CAMPINGWECKEN
This is a standard german breakfast. Very tasty to have with butter. In each bite you can sense the sweetness of dry grapes inside.

Things needed :

All purpose flour 500 gm
Margarine 75 gm
Sugar 50 gm
Egg 1
Salt 1 tsp
Dry yeast - 1 small packet
Milk 225 ml
Sugar (Hagelzucker) - 75 gm
Dry grapes or sultanas - some, 2 handful

For brushing: 1 egg

Preparation method :

Beat well margarine & sugar .
Add egg ,Salt ,Milk ,Dry yeast and beat well.
To this add flour and knead well to make the dough .

Keep aside this for 10 min.

Take the dough and partition int into 2 equal parts. One for the outer surface and one for the inside portion which contains Sugar & dry grapes.

Mix the dry grapes and Hagel sugar with one part and knead well.

Now make equal number of balls out of the 2 doughs.

Spread the plain dough in a wooden board into round using a rolling pin.
You can spread enough flour into the board and pin to avoid sticking when you want.

The round should be thicker.

Now place the dough with dry grapes into it .
and try to cover the ball , close the edges to make a ball.

Please refer the pictures for a good idea.

Do the same with rest of the pairs.



Place all in a tray (keep some distance between the balls since they will expand during baking) , covering with a wet cotton. Keep like this for an hour.

After 1 hr we can bake the bread.

Turn the ball around to face the smooth surface .

Beat 1 egg and paint on the visible surfaces of the ball.

Make a slit on the middle. Place Crystal sugar on the sides of the slit.






Bake for 20 min. in 175 degrees , or until the bread gets a golden color.

Stuffed Banana - Pazham Nirachathu Recipe

STUFFED SWEET BANANA

Things needed :
Bananas 2
All purpose flour - 1/2 cup

For the filling:
5 - Cashew nuts
2 - Cardamom
2 - Eggs
1 sp -sugar
10 -dry grapes
ghee, oil

Preparation method :
For the filling : Beat well egg , sugar & cardamom crushed & keep aside.

Heat a spoon Ghee in a nonstick pan .
Fry the dry grapes in it till it becomes balloon like. Take it n keep aside .

Add the egg mixture to it & make fine egg scrambles by breaking the thick egg pieces using the back of the spoon.

Next add the crushed nuts & fry till very slight brown. (I added nuts in the last because it will be tougher to remove nuts from pan when its crushed to small.) . Mix in fried dry grapes as well to this. Filling is ready.

I have used the same filling for other recipe , you can for some pics of the filling.


Slit the Banana into halves.

Remove the center with black seed with a small
knife , like in the picture.

Fill the filling.

Close the sides with a thick paste of flour.



Add enough Ghee or vegetable oil in a nonstick frying pan.
Fry turning over sides until your desired texture. Some people used to fry it only till smooth. I fried till little bit crispy.

Enjoy this classic snack of kerala with a cup of cardamom tea !

BANANA GHEE FRY

This is my favourite Banana recipe. One of the fastest 5 min. recipe .
All you need is a Ripe Banana & some Ghee ( clarified butter).
The idea is simple , fry them in a nonstick pan applying Ghee on both sides .

I used to have it as breakfast in my student time...its so easy to make & have it .
Some of friends didn't knew about this recipe at all & I was thinking it's being made only in my home. When I started this blog I came to notice that many other blogs have already posted this recipe ( laugh at me :D ).

Banana Pancake

BANANA PANCAKE
Pancake reminds me of the south Indian dosa we used to have back home. But anyway there is changes in the batter . While dosa is made out of rice flour and dal , pancakes are made using plain flour. This is my pancake which is banana flavoured . Try the recipe and leave your comments.

Things needed :

All purpose Flour 1 cup- 200 gm
Baking powder 2 tsp
salt - 1/4 tsp
Sugar - 2 levelled spoon
Milk 200ml - 1 glass
Egg - 1
Banana 1big - 150 gm
Vanilla essence - 1 sp
Butter or oil

Makes 7 pancakes.


Preparation method :

Mix the dry ingredients except sugar first in a mixing bowl.
(All purpose Flour ,Baking powder , salt )

Mash well banana in a mixer adding some milk , after its mashed, add rest of the milk,egg , sugar & vanilla essence , in the blender & blend well.

Make a well in the middle of the mixing bowl mixture & pour the blended mixture in it.
Mix well to make the thick batter.



Check the sugar of the batter . If you want more you can add it. But usually pancakes are made with less sugar .



In a nonstick pan pour some butter or oil .


Pour the pancake batter into it , spread to a round shape using backside of spoon & fry both sides.


Pour some honey or Jam or top it with some sliced bananas or strawberry or whatever you like & have it ...it makes a delicious breakfast .

Puttu - Kerala Steam Cake with banana

PUTTU - KERALA STEAM CAKE

I used red rice flour for making this reddish puttu which is easily available in market nowadays .
Things needed:

Puttu flour (chambavu ari puttu podi) - 2 cups
Grated coconut - 50 gm
salt - 1/2 tea spoon
Water - 3/4 cup

Banana sliced
Grated Jaggery ...( yes I use grated jaggery with it...its soo tasty & makes the puttu special)



Preparation method :

If you are using dessicated coconut then allow it to soak in water now.

Take the flour in a vessel. Pour some water into the flour . Try making small lumps using hand.

Also add 2 spoons of coconut with it.

The flour will be like in the picture.


You need to have the puttu maker apparatus for steaming puttu .

There is a long story how I got this puttu maker ..
After I shifted with my partner we tried lots of ways to steam cook puttu using different things ..
The first puttu maker's bottom was curved , which is unsuitable for our flat Cooking herd.. So it cant sit properly when the water boils ...it simply starts jumping & I have to hold it tightly to cook ... Also the steam escapes from the apparatus.

Then we tried with a Sieve ..the puttu either didn't cooked on the top or cooked too much in the bottom.

I even tried the vegetable steamer to make my favorite puttu .

Finally seeing all these pain my mom-in law got me one from India.

Masala Dosa

MASALA DOSA

Dosas are pancakes made in South India with rice flour and urad dal batter . Different things can be used as filling in Dosa s on which Masala Dosa tops , in which Potatoes- masala is used as filling . It is the most tasty one and it is a popular item served in south Indian hotels. It is always served with a Coconut chutney and Uzhunnu vadas ( dough nuts made out of Urad dal and vegetables ) & Sambar. Other varieties here I see are dosa with spinach filling - no idea about the recipe yet & also with chicken filling .

Things needed :

Onions 4 medium - 250 gm
Potatos 8 - 1kg + 250 gms , cooked ,peeled & cubed .
Carrots - 2
Green chillies -4 or 5
Mustard seeds 2 tsp
Urad dal - 1 handful

Turmeric -2 tsp
Chilly powder -1 tsp

Oil
Salt

Preparation method for the filling:

Heat oil in a nonstick vessel.
Pop mustard seeds.

Add Urad Dal & roast till slightly brown.
Add onions & green chillies & carrots , saute till the onion gets transparent.


Mix in the potatoes & spices & salt .
Saute well & cook covered for some time .
Check if the Carrots & Potatoes are cooked.

The filling is done .

Preparation method for the Dosa:

Pour Dosa batter in the pan.Spread it into round shape.
Spread some Ghee using a spoon.






Turn it around so that the other side will get cooked.




Around 2 minutes then turn it back again .
Divide the Dosa into 3 portions in mind.
Place the filling on center portion of the Dosa .




Fold right & left sides to the center .








Masala dosa thayyar !!

Raw Banana Jaggery

Another recipe which has the fragrance of my sweet childhood. Mom used to make it quickly when I comes back from school . Don't know how many times I had this .


The Bananas used in this recipe shouldn't be complete ripe. It should be only slightly ripe.


Things needed :
Raw banana -2 , cut round
Coconut Milk - 3 sp
Jaggery - 4sp ( as required )

Ghee - 1/2 sp
Cardamom - 3

Nuts for garnishing.(optional)

Preparation Method:
Partially cook the cut Banana in water adding coconut milk.

It gets cooked very fast.

So after its almost cooked add the grated Jaggery.

Fully cook.




Garnish with nuts & serve.

Vegetable Kuruma

Vegetable Kuruma
VEGETABLE KURUMA


Things Needed:
2 Carrots cubed - 175 gm
Beans cubed - 100 gm
Potato 1 cubed - 125 gm
Onion 1 big chopped 175 gm
Green chilly - 1 or 2

thickened Coconut milk - 3 sp
cardamom 1



To make the paste:

Coconut - 7 sp (1 handful or half coconut)
Turmeric - 1/2 tsp
Chilly powder - 1/4 tsp
Coriander - 1/4 tsp

Fennel seeds (perum jeerakam) - 1/2 sp
Cinnamon - 1 inch stick
Cloves -10

Grind the paste well & keep aside.



Preparation method :

Heat pan , add cut vegetables (Carrots,Beans,Potatoes,Onion) saute for 2 min.
Cook all these vegetables adding enough water & 3 & 1/2 sp thickened coconut milk .







Add ground paste & bring to boil.

After everything is cooked add a pinch of cardamom for a nice aroma.






Serve with Puri,Battoora , Naan or any other bread,

Wheat or Gothambu Battura


Wheat or Gothambu Battura Recipe

BATTURA
WHOLE WHEAT
(GOTHAMBU - ATTA) BATTURA
I got this recipe from one old magazine which my mom send me from India.
You can also make it using all purpose flour or maida , here is the recipe for Maida batttura .

Things needed :
Atta - 2 cup
Baking powder - 1/4 tsp
Milk -1/2 cup or like needed
Yogurt - 1 sp
Ghee 2 sp
Egg -1

Salt -1/4 tsp
Oil - enough to fry


Mix Atta, Baking powder & salt together in a big bowl .
Add other ingredients ( Egg , Ghee , Yogurt, milk) and mix very well.

Cover the top of the bowl with a wet cotton cloth.
Keep it aside for 2 hrs.



Make small balls out of the dough.
In a wooden board roll out the balls into round shape using a rolling pin .

Fry these in the oil turning both sides .

As you can see in the picture this recipe makes very pretty n soft Batturas ... Its worth a try.

I had it with my tasty spicy Vegetable Kuruma . It also goes well with Egg Curry.
