German Birthday Cake

    

My Son is a football freak and so does his Friends. So this time I made a Fotoball themed Cake for his Birthday party which was the same day of the German Portugal match. Luckily enough Germans won the game with 4 Goals😊 and just one week after they lost to England 😕 

I didnt get much time so actually used the Recipe for Eintracht Frankfurt Cake from the last Year. Just made a few adjustments and it changed the decorations and it worked out 😊

Fruit Cheese Cake

 

OBST-KÄSE KUCHEN


Happy Easter to everyone. 😊 

This time we made fruit cheese cake. 

Its really easy to bake. Hope u all like it 😀


Things Needed: 

for the base layer: 😊

 Eggs - 2 

Sugar- 130gm 

Oil - 100 ml 

Orange juice - 100 ml 

Cacao powder - 2 tbsp 

All purpose flour - 150 gm 

Backing powder - 1 tsp 


cheese layer in the middle :  ;) 

Eggs -3

Sugar -100 gm 

Vanilla sugar - 1 pack 

Quark -500 gm 

Lemon juice - 1 tbsp 

Whipping cream -100ml 

Grieß - 1 1/2 tbsp 


3rd layer :  (fruit layer)

Fruits (Strawberry, Green & Red Grapes, Mandarines) 

Lemon juice - 1 tbsp 

Glaze (Tortenguss klar )- 1 packet 

Sugar - 2 tbsp 

some butter to grease the baking pan

Spring baking form - 28 cm 


Preparation Method: 

Preheat the oven to 200 degrees. Apply butter to the sides of the spring form. Cover the base with backing paper. 

Beat the eggs & sugar in a vessel till thick cream . 

Add oil & orange juice. Mix. 

Mix together flour, backing powder & cacao powder seperately. Add this flour mix into the beaten egg-juice mix using a sieve in 2 batches. 

Pour this into the form. 

Bake for 15 min. 

For the 2nd layer, beat well 3 eggs with sugar & vanilla sugar. 

Add Quark & mix. Add lemon juice, cream & Grieß . Mix all together. 

Pour this mix over the baked cake. Bake again for another 25 min. until its done. 

After its cool down place the cut fruits on the cake. 

Make the glaze with lemonjuice, 2 tbsp sugar, water using the instructions written behind the glaze packet. Pour this over the strawberries .

Refrigerate it min. 2 hrs.

Mandarinen Käse Kuchen - Mandarin Cheesecake



Pretty easy to make . Tasty Dessert for the weekend ..Guten apetit!!

MANDARIN CHEESECAKE


THINGS NEEDED:

FOR BASE LAYER:
All purpose flour - 200gm
Backing powder - 1 tsp
Sugar - 75 gm
Soft butter - 75 gm
Egg - 1

FOR CREAM LAYER:
Quark/German cream cheese - 500 gm
Egg - 1
Sugar - 125 gm
Vanilla Pudding powder - 1 packet 
Vanilla essence - 1 tsp
Milk - 200 ml
Raps oil - 125 ml

Mandarins - 3 cans (drain the mandarins using a Sieb)


PREPARATION METHOD:

Knead the ingredients Flour, Backing powder, sugar, Egg, 
Soft butter for the base layer. 

Beat well with hands to make a soft dough.

Grease the backing pan with soft butter.

Spread over the base and sides of the backing pan with fingers.

Set aside. 

Beat well Quark(German cream cheese), Egg, sugar with a beating machine.
Add Vanilla pudding pulver, vanilla essence, Milk and Raps oil.

Beat till everything is well mixed uniformly..

Set aside half of the mandarins which are well in shape for later use.

Place the other half of the mandarins over the base layer. 

Pour the cream cheese over the mandarins and spread uniformly using a spatula.

Place rest of the mandarins which are set aside over the cream cheese.

You can arrange it to form like a butter fly. 

Bake over medium heat, 150 degrees for 45 minutes or till done.

After cooling down refrigerate the cake.

Eintracht Frankfurt Cake









EINTRACHT FRANKFURT TORTE

Hello all..!!

2020#!$$§$ hmm ... It’s been quite a challenging time for everyone… I wish if  there would be something like a time machine so we can travel back to the time & stop that silly Chinese from eating that poor Pangolin ... I wish everything would be normal one day when we wake up in the morning…just like that.

Elder son turned 12 ..atfirst I didn't want to do anything during this pandamic... But children should be happy as long as they can. The situation can change anytime and God knows whether I will get a chance to do anything for my Children again :( So I decided to do something to lift up their spirit so they can remember me later 😊

They were really lonely and bored during the lockdown time and they were missing their friends a lot. Their friend’s situation were not different. So I  invited some friends of my elder son on his birthday. His friends Parents were also very happy about the idea.

This time the Birthday cake from that of his favourite football team from Frankfurt…” Eintracht Frankfurt” …although I had to take a lot of effort the result was good.. he & his friends were mega happy.…

 This goes to my son for being such a helping child & a caring loving brother. 


THINGS NEEDED:

Have to bake 3 layers for this cake. If you notice there is only a slight difference in ingredients between each layer.

Cake Layer1: Normal

4 Eggs

4 Sp sugar

1 tsp Backing powder

4 Sp All purpose flour

Vanilla flavour


Cake Layer2: Chocolate Base

4 Eggs

4 Sp sugar

1 tsp Backing powder

3 Sp All purpose flour & 2 tbsp Cacao powder

Vanilla flavour

 

Cake Layer3: Red Base

4 Eggs

4 Sp sugar

1 tsp Backing powder

4 Sp All purpose flour

Vanilla flavour

Red food color

 

For the chocolate cream:

300 ml Cream

500 g Dark chocolate chopped

 

For the Almond-cheese Cream:

100-120 ml Cream

125 g Mascarpone

50 g Sugar

Vanilla flavour

50-70 g Almonds, powdered

2 tsp cream stiffener

 

 

PREPARATION METHOD:

 


Preparing Layer1: Normal layer

Beat Eggs with sugar and vanilla flavor till the mix turns white & creamy.

Dry mix all purpose flour & backing powder in a bowl.

Add the flour to egg mix using a sieve in batches and each time mix uniformly till smooth.

Pour in a backing pan and spread uniformly using spatula. Bake for 15- 20 min in 180 degrees till done. Set it aside to cool.

Preparing Layer2: Chocolate base

The same preparation method as for Layer1, the only difference is the Cacao powder 😊

So I copy paste,

Beat Eggs with sugar and vanilla flavor till the mix turns white & creamy.

Dry mix all purpose flour, Cacao powder & backing powder in a bowl.

Add the flour to egg mix using a sieve in batches and each time mix uniformly till smooth.

Pour in a backing pan and spread uniformly using spatula. Bake for 15- 20 min in 180 degrees till done. Set it aside to cool.


Preparing Layer3: Red layer

The same preparation method as for Layer1, the only difference is the red food color😊

So I copy paste again 😊,

Beat Eggs with sugar and vanilla flavor till the mix turns white & creamy.

Add the flour to egg mix using a sieve in batches & the red food color and each time mix uniformly till smooth.

Pour in a backing pan and spread uniformly using spatula. Bake for 15- 20 min in 180 degrees till done. Set it aside to cool.

 

Preparing Chocolate Cream:

Heat the Cream in a bowl till boil. Remove from heat and mix in the chopped chocolates. Mix till uniform.


Preparing the Almond Cheese Cream:

Beat the cream adding the cream stiffener. Mix in sugar & vanilla flavour .

Mix Mascarpone & Almond powder separately in a bowl.

Finally mix both mascarpone mix & beaten cream together & evenly mix with a spatula.

Refrigerate it.

  

Preparing the Cake :



Take each cake base ….Normal cake base, chocolate cake, red cake….and cut the cake in circles. 

Please refer the picture…From each cake you have to cut 2 circles. You can use Plates or bowls for measurement. Use the same Plate and bowl to cut all the cake layers.

Once you are done, make 3 different color combinations placing one layer from each color cake. 

When you combine cake layers like this, apply chocolate cream in between each circled layer in round..



Once a combination is done apply ½ of the Almond mascarpone cream on top of the layer. And place the next color combination on top of this Almond cream layer. Again apply next ½ of the mascarpone cream, place the third color combination. Apply Chocolate cream on the top & sides of the cake. Refrigerate the cake for atleast 4 hours.



For decoration I thinly rolled out a black fondant and spread over the cake. Used some water so that the fondant may stick to the cake. Cut the white fondant in circle and glue it to the black fondant with water. I cut the Eintracht Frankfurt’s symbol on a rolled out red fondant and glued it over the white fondant. I also used some other decorations.   

Ok ...cutting the Frankfurt symbol was bit challenging ...but it turned out to be ok...

Triple layered Chocolate mousse Cake!




Triple Layered Chocolate Mousse Cake


Wishing all my readers a Merry Christmas & happy new year .

Children wished for a chocolate cake and I picked up this recipe . 
Also sharing it with two naughty neighbour kids .


THINGS NEEDED


For the Base:
100 ml water
1 tsp vanilla extract or vanilla sugar
70 g sugar
150 g butter (unsalted)
70 g soft brown sugar
250 g dark chocolate chopped
4 Medium eggs


Middle Layer:
200 gm sweet chocolate, chopped fine 
400 gm cold heavy cream
1 tablespoon sugar
1 pinch salt


Top Layer:
t tbsp powdered gelatin
2 tablespoon water
200 gm white chocolate chopped
400 gm cold heavy cream

Decorations


MAKE THE BASE 

Layer1:
Combine the water and white & brown sugars in a small saucepan. Bring it to the boil to dissolve the sugars. Cube the butter and add it to the  dissolved sugar. Let it melt in the hot liquid. Chop the chocolates . Toss them in the hot sugar mixture and leave for 5 minutes, simmer until the chocolate melts and everything is well combined. Leave the chocolate to cool for a while. Meantime beat eggs in another bowl, then pour them into the chocolate mix while stirring. Continue to stir until smooth and combined.

Line a 22cm round springform cake tin with greaseproof paper. Pour in the mixture. Place the tin into a roasting tray and fill half of the roasting tray with water. Cook in the oven for 30 minutes, then cool in the fridge for a few hours, until set.


THE MOUSSE LAYERS

Layer2 (THE MIDDLE LAYER):  
Boil water in a vessel. Place your chopped semi dark milk chocolate in a heatproof bowl (stainless steel or tempered glass), Place the bowl in water. Let the chocolate melt .
Stir occasionally until smooth. 
Set it aside to cool down.
Using a mixer whip cream, granulated sugar and salt at medium speed until mixture begins to thicken. Increase speed to high and whip until soft peaks form.
Using rubber spatula, fold in the whipped cream & chocolate until uniform. Spread the prepared mousse over cooled cake spread uniformly using a flat spoon. Refrigerate cake at least 20 min.


Layer3 (THE TOP LAYER): 
Mix gelatin & water and set aside for 5 minutes. 
Melt white chocolate in hot water bath just like the milk chocolate. 

Bring 100 ml cream to simmer in small saucepan over medium-high heat. 
Remove from heat. Add gelatin mixture and mix well. 

Pour cream mixture over white chocolate and whisk until chocolate is melted and mixture is smooth, about 30 seconds. Cool to room temperature, stirring occasionally, 5 to 8 minutes 
(mixture will thicken slightly).
In clean bowl , whip the remaining cream until soft peaks form. 
Combine the whipped cream & white chocolate mixture using spatula till uniform & smooth. 
Spoon white chocolate mousse into pan over middle layer. Smooth top with the spatula. 
Refrigerate the cake for 2 hours before use.
Garnish the top of cake as per wish. 
Separate the cake from the pan by running a knife around the cake .
 Cut into slices and serve.

Chocolate Cake





CHOCOLATE CAKE

Another favourite recipe. 
Made it a couple of times on Birthdays. 
Loved a lot by children :)  !!!

THINGS NEEDED

Dark Chocolate        - 500 gm
All purpose flour     - 100 gm
Butter                       - 250 gm
Eggs                         - 8
Sugar                        - 300 gm
Backing powder       - 1 tsp


PREPARATION METHOD

Add Butter and chocolate in a pan. Slowly melt in low heat. Set aside.
Beat eggs  with sugar till they form a thick cream.
Add Flour and backing powder & mix .
Finally add melted chocolate. Mix uniformly.
Pour into a backing tray. Bake for around 25 min in 200 degrees.

Red Velvet Cake





RED VELVET CAKE

THINGS NEEDED

Cake:
300 g Sugar
3         Eggs
1 Pack. Vanillasugar
340 g Flour
1 Sp         Cacaopowder
1 Prise     Salt
1 TL Backing soda
2 TL Backing powder
300 ml oil
280 ml Buttermilk
1 TL red food color (as paste)

Frosting:
200 g Philadelphia® (cream cheese)
250 g Mascarpone (Italian cream cheese)
1 tsp Vanille aroma
120 g powder sugar
400 ml Vollrahm (Thickened cream)

PREPARATION METHOD


Cake:
Beat Eggs with suagr and vanilla sugar.
Add red food colour to it.
Dry mix flour,cacao powder, salt, backing powder and soda in a seperate vessel.
Add the flour mix to the egg mixture portion by portion and mix well.
Pour the batter to a backing tray.
Bake till done.


Frosting:

Mix well all ingredients together.
Divide the cake horizontally into 2 portions .
Apply some cream in between the layers then on top of it.

Decorate using edible cake decorations.

10th Birthday Cake - A White Dream







WHITE CHOCOLATE CREAM CAKE

THINGS NEEDED
~~-------------------------~~

For Cake:
300 g White chocolate
8 Egg yolk
8 Egg white
200 g powder sugar
300 g Butter
400 g All purpose flour
2 tsp. Backing powder

For Cream layer:
Pudding powder  2 pack
1 litre milk
Butter 3 Sp
Powder sugar - 50 gm

Cream - 4 pack ( each 200ml)
Blue Food color 


PREPARATION METHOD

Melt the chocolate in warm water bath .
Add a pinch of salt in egg white and beat till stiff cream.
Beat egg yellow, butter and sugar till creamy.
Carefully add the egg white and mix uniformly with a spatula.
Next mix in flour and backing powder.
Mix everything uniformly.
Bake for 40 mins or till done.

For cream layer:
Prepare pudding as per instructions behind the package.
Add 3 sp butter to the pudding.
When done, mix it using a mixer so as to remove any lumps.
Refreigerate atleast for 2 hours.

Whip cream and refrigerate.

Section the cake horizontally 
and spread some cream or pudding over the base layer.
Place the upper layer over it.

Mix the cream with icing sugar, fill it in piping bag to decorate the cake.

Mix blue food colour and cream and fill it in another piping bag.
I have added different proportion of colour every time,
 so as to get different shades of blue.

Berries cream cheese cake

THINGS NEEDED

Base:
250 g Butter 
200 + 150 g Sugar
1 tsp Vanilla essense 
6       Eggs
350 g Flour
1 Pck. Backing powder
30 g Cacao powder

Cream:
500 g Mascarpone (Italian cream cheese)
250 g Quark (German cream cheese)
2 tbsp Lemon juice

Fruit Layer:
around 600 g Mixed berries ( z.B. Himbeeren, Johannisbeeren, Brombeeren usw.)
2 Pck. Red cake Glaze


PREPARATION METHOD

Beat 200 sugar, butter, vanilla essence, eggs till creamy.
Add flour, cacao powder and backing powder into it.
Mix uniformly.
Pour into backing tray. Spread uniformly.
Bake for around 40 min in 180 degrees.
When done set aside to cool down.

To make cream mix well Quark, 150 sugar, Mascarpone & Lemon juice.
Spread over the cooled down cake.

Place mixed berries over cheese layer. Press them slightly into the cheese.

Make glaze according to the instructions given.

Set aside 2 - 3 min to cool down. Pour over the fruits.
Refrigerate for 2 hrs.

Donauwellen German Cake



GERMAN TRADITIONAL DONAUWELLEN CAKE

Made this on a couple of occasions now.  One of my favourite cake.

THINGS NEEDED:

For cake:

350 g Butter
250 g Sugar
7 Eggs
450 g All purpose flour
1 Pck. Backing powder
3 EL Cacao powder
3 EL Powder sugar
2 Glas Cherries

For cream layer:

500 ml Milk
1 Pck. Vanilla pudding powder
1 Pck. Vanilla sugar
225 g Butter
5 EL Powder sugar

For chocolate layer:

250 g coconut fat (Kokosfett)
5 EL Sugar
5 EL Cacao powder
2 Eggs
2 EL Milk


PREPARATION METHOD:

To make the cake,
Beat sugar, butter and eggs well till thick and creamy.
Dry mix flour, backing powder.
Mix both egg mixture and flour together to make a thick batter.
Grease well a 28 inch backing form .
Pour half of the batter into this and spread nicely.
To the other half add cacao powder and powder sugar .
Spread this gently over the first half of the batter.
Place cherries all over the cake.
Bake for 45 min in a 180 degrees preheated oven. 

To make the Cream layer
Make pudding as per the instructions in the pack.
Add vanilla sugar/vanilla essense while making. Let it cool completely.
Add Butter and powder sugar to this and mix well.
Apply it on top of the cake.

To make the chocolate layer
For chocolate layer, transfer the coconut fat in a bowl. Let it melt  by placing over warm water.
Mix in Cacao powder, suagr and eggs and milk . Mix very well.
Pour it over the cream layer.

After the chocolate is semi firm, draw using a fork waves to get the traditionally looking 
Donauwellen cake. (wellen - waves)

Carrot Cake - Easter Special







CARROT CAKE - EASTER SPECIAL

   Carrots cakes are typically made during Easter times. This time I got again a recipe from Chefkoch.de, which came out super.

Made 2 times till now. First for Easter celebration in the church and second for sons Holy Communion.  Recieved very positive remarks both times. The recipe is recommandable and i will be making it again ;)

THINGS NEEDED:

Carrots grated - 375gm
Sugar              -  250 gm
Eggs                - 4
Vegetable Oil  - 250 ml
Cinnamon       - 1 tsp
Backing powder - 2 tsp
All purpose flour- 250 gm
Almonds powdered - 200 gm

For frosting :
Sugar, powdered - 100 gm
Cream cheese (Frischkäse) - 300 gm
Vanillasugar - 1 tbsp
Lemon Juice - 2 tbsp

PREPARATION METHOD:

Beat Eggs and sugar till creamy .
Mix in oil, cinnamon .
Add grated carrots, powdered almonds.
Mix flour and backing powder. Then add it into carrot mixture in 2 batches .
Mix uniformly.
Pour into a 28 inch form and bake in 180 degrees for 45 minutes.

Mix well the ingredients for frosting and
apply uniformly over the cooled down cake.
Decorate with iced carrots and chopped pistas.
