Apfel Strudel


APPLE STRUDEL



Strudel is part of Austrian cuisine . There are many variations of strudel of which Apple strudel (Apfel strudel) is the most popular one. In Austrian Cafes they serve Apple strudel with cream or vanilla sauce and coffee.


Things needed : 


Apple - 750 gm
Puff pastry - 6 slices
Cashew nuts -1 handful
Walnuts -1 handful
Brown sugar - 2 sp or according to your need.
I used very sweet apples of Gala variety , so I didn't had to use lot of sugar.
Egg - 1 , beaten , to brush on the strudels
Powder sugar - to sprinkle on the finished strudel

Preparation method :

De skin the apples , cut into slices. Seeds and stem should be removed .

Chop both nuts . Mix Apples , nuts and sugar in a bowl and mix well . Filling for the strudel is ready.


Take a slice of puff pastry. Roll it on all sides using a rolling pin , on a wooden board.


Follow the pictures that for spinach strudel to make a strudel package .
Preheat the oven to 180 degrees.

Place them all on a baking tray .
Make slits on the strudel using knife.

Brush the beaten egg on the strudel . This gives a glow to its surface also makes it crispier.
Bake until it is done.

Sprinkle powder sugar when hot.

Serve it with some cream or vanilla sauce on top.

Egg puffs


EGG PUFFS

Egg puffs are Puff pastry stuffed with Egg halves , fried Onions and spices. There is also another method in which they use only Puff pastry and Egg half. But I am mostly familiar with this one.

It is a very popular snack in Canteens, Bakeries back at Kerala. There is a bakery near my home from where me & my brother used to buy snacks from childhood. We were regular customers in that bakery and the shopkeeper knows us very well.Sometimes we used to get 1 or 2 puffs for free.
Their are also Meat puffs which are also my favourite, but i will try them later..


Things needed :

Boiled Eggs - 6
Onion - 4 big 600 gm
Ginger garlic - 2 full sp chopped
Green chilly - 2 medium chopped

Chilly powder - 1/2 sp
Turmeric - 1/4 sp
Coriander - 1/2 sp
Meat masala - 1/4 sp
Garam masala -1 tsp
OR
Use freshly crushed spices .Refer below it enhances the flavor of the filling .

Garam masala Spices :

1/4 spoon of Fennel seeds ( perum jeerakam)
1 inch Cinnamon stick
10 cloves

Crush them coarsely & keep aside.


Preparation method :


Boil the eggs in a deep vessel.
Tip : Add 1/2 sp of salt in the water. It helps the eggs from cracking the eggs.

Heat oil in a nonstick pan.
Add Ginger - Garlic chopped & saute & fry .






Now add Chilly chopped & Onions sliced , saute till transparent.





Add all the Chilly powder, Turmeric, Coriander powder & saute until it is well coated on the onions.

Add the crushed Garam masala spices & Meat masala in the last min. Saute for 1 min.

Finally add 3 spoons water , because we want the filling to be little bit wet.
Onion filling is done.

Take a puff pastry sheet in a wooden board.Sprinkle enough dough on both sides to avoid it form sticking to the rolling pin. Roll it a little bit using the rolling pin , to make it almost like a square .

Place 2 sp onion filling in the center & spread it.
Place 1/2 of an Egg on it.

Then fold it to make puffs.

Follow the pictures to make a tray of puffs .












Bake them for 20 minutes. Or until it turns Golden brown.

Spinach Strudel

Spinach Strudel

SPINACH STRUDEL

Its a traditional layered pastry with a filling inside. The fillings can be different like
Apple strudel and sweet cabbage strudel .You can't get enough with a single one.

Things needed :

1/2 pack Spinach 225 gm
1 Onion medium size, chopped
1 Green chilly, chopped
1/2 Tomato, chopped
1 sp Ginger Garlic paste
1 sp Black Pepper powder
1 slice Cheese
salt

Puff pastry 6 slices
2 eggs beaten ( for brushing the puff pastry)

Preparation method for the filling :


Heat oil in a small nonstick pan . Add ginger garlic paste saute until rawness goes ,
Add chopped onion & greenchilly ,Saute.
When it becomes transparent ( + a small change of color ),
Add tomato,saute & cook till its mashy.
Add the spinach & pepper & salt , saute & cook .
Tip:You can add 1-2 sp of water if its too dry, but dont add extra on any reason , since we want to use this as a filling.

Finally add a slice of cheese. This will make the filling thicker.

The filling is ready.

Pour some flour in a wooden board , spread a puff pastry piece with a rolling pin.
Follow the pictures to make a Strudel package.



Preheat the oven to 180 degrees.

Spread a baking sheet on a baking tray.
Now Place all the strudel packages on a tray .

Make cuts on the strudel in each inch using a knife, so that the steam can escape while its getting cooked.

Brush the beaten eggs nicely on all the visible sides of the strudel using a brush.
This gives a glow to its surface also makes it crispier.

Bake until it is golden brown like in pic.













Crispy spinach strudel is ready to eat.
