Squid Thoran - Kanava Thoran


KANAVA THORAN - SQUID STIR FRY


Squid thoran is my hus's favourite, so whenever we goes home mom used to make it for him.
This is her recipe, writing down for my future use as well..


THINGS NEEDED:

Squid - 2 cup , washed and cut round,  or cut to small pieces if the squid is big.
Turmeric - 1/2 tsp

Coconut grated - 1/2 cup
Ginger chopped- 1tbsp
Garlic chopped- 1/2 tbsp
Green chilly chopped - 1

Mustard seeds
Red onion thinly sliced - 1
Curry leaves - 2 spring


PREPARATION METHOD:

Marinate Squid with 1/2 tsp salt and turmeric and keep aside.

Grid coconut with ginger, garlic and green chilly and keep aside.

Take two bottom thick pans.

Add some oil in a pan. Toss in the squid pieces. Saute and cook till the water comes out from the squid.

Cover the squid and allow it to cook. Add some water if there is not enough water.

In another pan add oil splutter mustard seeds, curry leaves, add onion and saute till they turn transparent.

Add cooked squid, ground coconut mix to the pan with onion and mix well.

Cook covered for 5 min. in medium flame. Check for salt.

Kanava thoran is done. Serve with rice.

Prawn Masala

PRAWN MASALA
THINGS NEEDED:

Prawn - 2 cups

Ginger garlic - 2 tbsp
Shallots sliced -  a handful
Onion sliced - 1
Chilly sliced - 2
Tomato finely chopped- 1

Turmeric - 1/2 tsp
Chilly powder - 1 tbsp
Coriander powder - 1 tsp

Mustard seeds
Fenugreek
Curry leaves


PREPARATION METHOD:

Heat oil in a pan. Splutter mustard seeds. Add fenugreen seeds.

Add ginger garlic and saute till rawness goes.

Add shallots, saute n fry.

Add turmeric, chilly powder, coriander powder one after another sauting in between.

Add tomato and cook well. Grind the mixture to a paste, set aside.

Heat 1 spoon oil splutter curry leaves in it. Add chopped onions and then the ground paste.

Toss in prawn to this, saute well , add some water and cook covered till the prawn is soft.

Best served with rice or chappathi.

Crab Curry



CRAB CURRY - NJANDU CURRY

Here's how we prepare Crab at home.


THINGS NEEDED:

Oil
Ginger chopped - 1 sp
Onion thinly sliced - 1 big
Green chillies - 2 sliced
Tomato/ Tomato paste - 2 sp

Coconut grated - 1 cup
Turmeric - 1/2 tsp
Chilly powder - 2 tsp
Coriander powder - 1/2 tsp
Garam masala - 1/2 tsp

Crab 


PREPARATION METHOD:

Heat 2 spoil in a pan.  Add ginger n saute till rawness goes.
Add onion & chillies n fry till transparent.
Add tomato paste n salt . Saute n cook for 2 min.
Grind coconut, turmeric, chilly powder, coriander powder & garam masala together.
Cook coconut paste in onion mix adding some water and enough salt.
Add crabs to this sauce. Mix well & cook covered sauting in between.

Serve with tapioca & rice.

Nadan Fish Curry

KERALA STYLE NADAN FISH CURRY - Trivandrum

This mouth watering fish curry is made by my mom. I have been to other houses n tried their version of fish curries but none could beat my mom's. Its her special recipe. I am writing it just like she told me.

This time when we were at home mom was sun drying some kudam puli(Garcinia cambogia) that she plucked from my uncle's home. My mom's native place is full of Garcinia trees and whenever we goes there we used to eat it n make our teeth yellow..some memories !!!

This recipe includes coconut paste . There is another version of fish curry without using coconut paste called Fish moly is here.

Things Needed:

Fish - Something you like but with a hard flesh, cut properly, washed n so
Kudam puli - 2 pieces
Tomato - 2 small, sliced
Raw Mango or Drum stick(Muringa) -1, sliced

Tampering:
Finely chopped ginger - 1 tsp
Uluva - 2 pinches
Curry leaves - 2 spring

Grind to paste:
- 1/2 coconut
Shallot - 1 tbsp, cut
Chilli powder - 2tbsp
Coriander - 1 tbsp
Salt - 1 tbsp

Preparation Method:
Pour the ground coconut mixture in the pot. In house mom uses a clay pot (chatti), which actually brings more flavour to the curry.
Add kudam puli.
Place all fish pieces in the pan.The pieces should be dipped in it so add enough water if needed.
Cover & cook.
When it is almost cooked place sliced tomato pieces , mango pieces or green chillies.
Well adding mango or muringa & green chilli part is optional but it makes the curry damn tasty.
For tampering heat 2sp oil in another pan. Add ginger, uluva & curry leaves into it & finally pour this over the cooked curry.

This curry tastes its best even the2nd day & if you are using manchatti then you dont even need to put it in the refrigerator, it will stay good !

Fish Moly

Fish curry , Fish molyFISH MOLY - a tasty Fish curry done with shallots
Things needed :

Fish - 7 no. ( Sardine or mathi of malayalam)
Mustard seeds - 1 tsp
Ginger - 1 tbsp ,coarsely chopped
Garlic -1 tbsp, coarsely chopped
Shallots - a dozen or 2 handful , sliced
Tomato - 1 , sliced
Green Chilly - 2 , slit

Chilly powder - 1+ 1/2 tbsp
Coriander powder - 2 tbsp
Turmeric - 1/4 tsp
Salt - 1+1/2 tsp
Curry leaves - 2 springs
Garcinia cambogia (or kudam puli of malayalam) - 2 small pieces

Preparation method :
Heat 5 sp oil in a pan.
Add mustard seeds , allow them to splutter.
Add Ginger-garlic chopped saute and fry till its rawness goes.
Add shallots, green chillies . Saute n fry until the shallot's colour changes.
Keep a glass of water nearby.Turn off the Heat. Add chillypowder on top of the shallots and mix well for 5 seconds.
Add water, coriander powder , salt and Garcinia cambogia puli to this . Bring it near to boil . Place the fish pieces on this.
Add enough water if needed.Add curry leaves .And cook covered until the fish is cooked.
When it is almost done , check for puli & salt . If its enough you can remove the puli from the curry.
For better taste water should be less.So heat until you get a gravy consistency.
2 min before finishing Cut a tomato lengthwise and place the pieces on top of the curry. The tomatoes should only be slightly cooked.

Fish Fry

Things needed :
salt - 1 tsp
Turmeric - 1/4 tsp
Chilly powder - 1- 3/4 tbsp
Oil to fry

Preparation method :
Clean the fish. Make small cuts on both sides.
Marinate with Salt , turmeric & chilly powder .
Fry in oil turning both sides.

Serve the tasty fish fry with rice.

Prawn Spicy Fry

Prawn Spicy Fry Recipe

PRAWN SPICY FRY

Things needed :

Prawn 450 gm
Onions (big) - 1 1/2 sliced 250 gm
Tomato - 1 cut into big pieces
Green chilly - 2 slit cut
Turmeric - 1/2 tsp turmeric
Chilly powder - 1 tsp
Salt ,oil

Preparation method :

Clean the prawn marinate it with salt , turmeric , chilly powder & keep in the refrigerator.
Slice the onions & slit the chillies. Fry them adding some oil in a nonstick pan and keep aside .
To the same pan add ginger garlic & fry till rawness goes . Add the Prawns to it and fry for 3min .
Add some water & cook closing the lid until the prawn cooks.
To the cooked prawn add the fried onions , mix well .
Add the cut tomatoes & curry leaves .
Cook for another 3 min .
Prawn dry fry is done.

Prawn Curry - Prawn Theeyal - Kerala style recipe

Prawn Curry Recipe

Prawn Curry
PRAWN CURRY

I am a big fan of the prawn curry that my mom makes at home. Whenever she makes it I eats up almost all of it & when she founds the empty kadai in the kitchen , comes straightly to me for firing ..lolzz . This recipe is a dedication to her..

Things needed:

Prawn - 1 pack 400g
Shallots sliced - 1 cup - 200 gm
Curry leaves -2 strand
Green chillies -2 slit or sliced
Ginger - Garlic - 2tsp chopped
Garcinia cambogia (or kudam puli of malayalam) - 1 piece
Oil - 3sp
Turmeric - 1/4 tsp

For making curry paste:

Dessicated coconut - 1 1/2 handful
Chilly powder - 1 1/2 sp
Coriander powder - 1 sp


Preparation method :

Clean Prawn , marinate it with 1 tsp salt, turmeric & keep it aside.


Heat oil in a nonstick vessel .
Add Ginger garlic first , slightly roast.

Add shallots & green chillies ,curry leaves. Saute till shallots become transparent .







Add prawn , saute for 3 minutes . Prawn becomes slightly cooked & changes its color now.

Add the piece of Garcinia cambogia .

Add a glass of water & cook.





Preparation of the curry paste:

Roast the coconut .
Add the spices with coconut & grind to a powder .

Note: Due to the oiliness of the coconut it will be a oily paste which you will get.

Mix this coconut paste with the prawn .
Check for salt , add curry leaves & cook until the oil separates to the top.

Add enough water whenever necessary.

The coconut paste gives richness to your curry making it an ideal side dish for rice.

Serve with Rice .
