Cherry Crumble Cake

CHERRY CRUMBLE CAKE 

Another recipe from my Recipe book, made for our party.
Things needed : Cherry - 2 cups For cake: Butter - 250 gm ( room temperature ) Sugar - 250 gm Lemon flavour - 1 drop Eggs - 5 All purpose Flour - 500 gm Backing powder - 1 packet Cherry juice - 125 ml For the Crumble : All purpose Flour - 150 gm Sugar - 150 gm Butter - 100 gm ( a bit cold ) For Decoration : Red Glaze - 1 packet Sugar - 2 tbsp Cherry juice - 250 ml Aprikosen Jam Preparation method : Grease a Backing tray & keep aside. Cut the cherries into halves removing the seeds. Beat well butter with sugar & Lemon flavour . Add eggs one by one & beat well each time. Mix 500 gm all purpose Flour with backing powder separately. Add first batch of the flour using a sieve , add first batch of cherry juice (125 ml) then beat well , add the 2nd batch of flour then cherry juice. Do this in 3 or 4 batches until all the flour is mixed well . Pour the flour into the backing tray and level the top. Preheat oven to 180 degrees. For making the crumbles mix flour, sugar & butter and knead to make small small crumbles. Spread this over the cake flour alternating with cherries. Bake for 45 min. After baking allow to cool down. Make red glaze adding sugar & cherry juice , pour over cherries. Apply soft aprikosen jam over the crumbles using a brush .
